Chef Chi Kwun Choi
Chef Chi Kwun Choi began his career in Hong Kong at an unbelievable 13 years of age, eventually working in a chef capacity at many of the city's most prestigious restaurants including the Hilltop Country Club, The Golden Palace Restaurant, the Kowloon Private Club and Nautilus Limited. He then continued his successful career at Las Vegas' top resorts, including the MGM Grand, Mirage, Rio, Mandalay Bay and Green Valley Ranch.
Chef Choi has over 35 years of experience creating Chinese cuisine that marries contemporary and traditional flavors. His specialty is "borderless cooking," which creatively caters to Far East and Western palates while still providing an authentic gourmet dining experience using the finest ingredients.
A winner of The American Academy of Hospitality Sciences' Five Star Diamond Award (1998) and Vice President of the Las Vegas Chapter of the American Chefs' Association (ongoing), Chef Choi has been regularly recognized for his exceptional skills; his tenure in Las Vegas included the winning of the exclusive Epicurean Award for Best Chinese Restaurant in Las Vegas (2005).
Chef Choi currently as executive chef of The Blossom Chinese Fine Dining at Aria in City Center.
